8 Great Things To Do With Tarragon

We discovered Tarragon only three years ago and now it's a staple in our garden.
You can grow it in a pot or in the middle of your garden bed. Use fine-textured, compost-amended soil, water occasionally and the plants will thrive.
Tarragon has a mild licorice or anise flavor and you can grow it indoors all year round.

1. Simply pull the leaves off the stem and put them in your salad. Brightens up raw veggies with its unique flavor.​
2. When you make your fish soup (and one day you must make Cioppino), use tarragon as well as the parsley and other herbs suggested in the recipes. You will be amazed at how wonderful this soup tastes with just a few tender sprigs of tarragon.​
3. If baking fish, rub both sides of the fish with tarragon leaves before baking.​
4. Boil your fresh picked beans for 45 seconds, drain, drizzle olive oil and press a clove of garlic over the warm beans. Chop a couple of sprigs of tarragon and add to the mix. Add a little lemon or white wine vinegar. Stir and serve at room temperature.​
5. Tarragon and eggs go well together. Use with scrambled eggs, omelets and deviled eggs.​
6. Add tarragon to all chicken and pork marinades. Try making a Bearnaise Sauce for your meat and fish dishes. Worth the effort.​
7. When making chicken or vegetable soups, add freshly chopped tarragon just before the soup is ready.​
8. When baking chicken, loosen the skin and put several tarragon and thyme sprigs under the skin. Add a few garlic cloves too.
