The organic gardener can really exercise his/her creativity with ingredients pulled up in the morning or afternoon and prepared for lunch or dinner the very same day. A cornucopia of veggies can be tossed into and tossed in a salad. Here are just a few.
Feel free to experiment with the ingredients, adding and subtracting as you please. Simple apple cider vinegar/olive oil dressings, spiced up with some thyme, oregano or tarragon work very well with fresh raw veggies. Experiment.
